I am fully and utterly in love with crockpot meals. What’s better than throwing ingredients into a crockpot, walking away only to return to a warm meal waiting for you? You know how everything tastes better when someone else makes it for you?
That’s what a crockpot reminds me of. It’s almost like I did nothing and I can pretend my husband is one of those men who cook and maybe he made it?!?!
Who am I kidding, Jonathon’s specialty is tacos. Here’s a quote directly from his mouth.
“Dude, I make the best tacos. There are these packets at the store that you just pour onto the meat and it’s so bomb.”

So yeah, I’ll stick with the imaginary thought for now. Regardless, if there were ever a time to use a crockpot it would be months October – February here in Minnesota. Actually maybe April, but we’ll never know.
If you still see me posting crockpot meals in April you know I’m also scrapping ice off my car windshield.
When I think of Chili, I think of beans. Anyone else? Like, super beany to where I question what exactly I’m eating. This Turkey Quinoa Chili is made with one can of black beans and that’s all. It has so many other goodies. Plus it’s so filling and even better leftover.
What’s inside?
Ground Turkey – Quinoa – Sweet Potato – Onion & Garlic – Crushed Tomatoes – Black Beans – Chicken Stock – Spices – Love

TIPS: I had mine on high for about 3 1/2 hours. Make sure not to overcook this because then the sweet potato will become mashed sweet potato and we don’t want that. Turn crockpot to warm if you aren’t going to eat right away. Store in the fridge for up to 5 days or freeze for months. This makes plenty so no need to double it, I don’t think it would fit in the crockpot anyway.
