Hola!
The other day my brother Nathan, who just moved to Minneapolis (whohoo), came over for dinner. It wasn’t until 30 minutes before he came over that I realized, “oh yeah, my brother is coming over.”
A typical dinner for us is throwing whatever is in the fridge into a pan and calling it a day. I rarely have time to plan out my meals as much as I know it would help, let’s be real, it just doesn’t happen.
We LOVE Mexican food. That and pizza are two things I could have for every meal and never get sick of it.
I also LOVE Crisp & Greens. It’s a healthy spot Jon and I like to go to a couple blocks from the gym. They have salads, bowls, kombucha on tap?!?!
Yeah, I know.
I’m definitely one to choose the healthier foods even if it means paying a couple bucks more. That’s always been worth it to me. It beats being sick, and spending money on trying to get better.
However the $12 per bowl was just adding up considering I know all the employees by name, their favorite food, plus their weekend plans. I figured I needed a Crisp & Greens break.
That led me to my own Fiesta Bowl. It’s extremely easy and even better left over – that makes it perfect for the busy bee that you are. The secret sauce to making this amazing is Bolthouse Farms Avocado Cilantro Yogurt Sauce. Unreal – a must with this dish.
I hope you enjoy! Please let me know if you try this Fiesta Bowl.
+ enjoy Vlog .03! A little behind the scenes to my Fiesta Bowl.
This is a meal that I threw together with no actual measurements. I think that’s the best way to cook! So do as you know best or follow along in the video below to see how I do things. You really can’t mess up.
