Do you love a good Monday morning? There’s something about a fresh week that makes me feel really good. Especially starting that week with some healthy snacks.
Does anyone else go to bed looking forward to breakfast and coffee in the morning? I remember when I was younger my mom would tell me the night before my birthday that the sooner I went to bed, the faster my big day would come.
Although that’s a sneaky mom trick to get me to bed, it’s still very relevant today.
Pretty much I think the same thing every night. The sooner I can lay in bed and fall asleep, the sooner I’ll be able to sip my hot coffee and shove my face.
You know, I didn’t think that sounded strange until just now.
Have you met a breakfast food that you didn’t like? For me breakfast It’s seriously the most important part of my day. They don’t just say that, it’s true. Breakfast sets you up for the rest of the day.
If I have a great breakfast, I crave less, I choose better foods, and I find late at night I don’t binge or crave sugar. When I don’t eat breakfast I find that I’m never fully satisfied throughout the day.
I know a lot of people are on-the-go and that means breakfast isn’t always their first priority. These pancakes are perfect for on-the-go. I keep them in the fridge and eat them as a snack! That’s the great thing about these Banana Oat Pancakes. It’s not weird, it’s amazing.
These little guys are made with oat flour. Meaning I throw gluten-free old-fashioned oats into a blender and blend until a flour texture. Easy peasy.
You know the saying, “you get what you pay for” well in this case, the time spent on these pancakes is well worth the naturally sweet, creamy and perfect pancake we all need in our lives.
I made these at 8 pm the other night for the next day. Seriously they’re an amazing snack, and when I wake up to have my coffee, I have yummy pancakes waiting for me.
I have tried the banana pancakes that are only banana and eggs but that just doesn’t do it for me. Tastes fine but doesn’t scream, get in my belly, you know?
