Meatballs always remind me of growing up. Comfort food at its finest.
I come from a big family and meatballs were a go-to meal. They fill you up, large quantities are made, and they’re a crowd favorite. Plus, I grew up on a cattle ranch so if red meat wasn’t at the dinner table then were we even ranchers?
It’s like my mom was meal prepping before meal prepping was a thing.
Leftovers for days.
As with most traditional meals, there’s a million new ways to make them. Which is awesome! Variety is important in all aspects.
This recipe is from a beloved client and friend. He and his partner are kings of all things decor, dinner parties, wine & fun. After devouring these at one of their lovely dinners, I had to have the recipe. I had to try making them for myself. And I had to convince everyone that it was my recipe and I am the meatball queen.
Not buying it?
It’s ok, neither did my fiancé. But i’m working on him.
No one said changing a man was easy
I can’t stress how amazing these are to have in your fridge during the week. They freeze great, too! They take seemingly boring meal prep and add a fun kick. Try something new this week!
