When your husband decides to re-do the kitchen cabinets during the busiest week of the summer, you just nod and politely say, what in the h-e-double hockey sticks is wrong with you, boy? I really do appreciate his hard work, it’s just really hard to live in a construction zone. Let alone try to eat in one. He started the project as any skilled husband would and went straight to YouTube. He watched 5 videos and went to work. (Pictures to come soon!) One step closer to my white kitchen!
Anyway, trying to cook in that pile of sawdust was less than desirable. I couldn’t meal prep with my pot and pans in the bedroom and my utensils on the living room floor. Once things started to slowly come back together, the first thing I did was make this Quinoa Breakfast Bowl. Not only for breakfast but lunch and dinner, too.
You can prep the ingredients in this bowl prior and throw everything together which makes it perfect to take to work or eat while you’re painting cabinets. Either one seems to work fine!
This bowl is loaded with nutrients and pure tasty goodness, my friend. Plus, I surprised myself with the homemade vinaigrette I came up with out of nowhere.
I’m a vinaigrette wizard, everyone.
Quinoa (your preference – I had Red Quinoa on hand)
Fajita Veggies – Onion – Peppers – Mushrooms (optional) – Shredded Brussel Sprouts (also optional)
Scrambled Eggs – depending on the time of day, you can substitute more veggies or chicken
-plus a ton of delicious toppings-
I warmed up some tortillas and made Jon burritos with this mixture. He loved it and I can tell when he really loves something. With every bite, he makes a different noise – it’s so obvious.
Once again you can add your favorite goodies in this. Black beans would be good (but beans bloat me to 5 months pregnant so that’s a hard pass).

TIPS // feel free to use whatever portion of each ingredient is best for you. I make this bowl using different toppings all the time. It’s the Homemade Ginger Sauce that really makes this dish!
