Happy Sunday!
I don’t want to use the word busy, so let’s just say this past week has been productive. I don’t need to bore you with what I did but I definitely didn’t have time to make myself a proper meal if that gives you any clue. I think all I ate last week was corn nuts and chips. But please keep that between us.
Anyway, the craziness of this last week reminded me that I need to prepare or I’m the girl who will turn to pizza and chips when I’m stressed.
And if you’re by chance like me I wanted to share these 3 Snack Ideas for on-the-go! Still delicious but without the guilt and bloat. I work from home a lot, and I still 100% consider that on-the-go. I don’t want to stop mid-thought just to cook?! I can’t be bothered, so I love to have snacks on hand. Here are some you can try at home.
SWEET TREAT
Homemade Peanut Butter Cups
makes 24
ingredients:
- 8 1/2 oz. or (1 cup) dark chocolate chips or chocolate bar
- 1/3 cup coconut oil, melted
- 8 1/2 oz 100% natural peanut butter, almond butter or cashew butter. Whatever your favorite is!
directions:
- Line muffin tins with liners
- In a microwave-safe bowl, add the chocolate and warm in the microwave for 30 seconds. Remove and stir. Continue in 30-second increments until melted and smooth, stirring in between every 30 seconds.
- Add 2 tbsp coconut oil and stir until well combined.
- Spoon 1 tsp. of the chocolate mixture into each paper liner. Use the spoon to push the chocolate up the sides of each liner slightly. This will help to hold the filling in.
- Place in the freezer for 10 minutes to set.
- Meanwhile, place the remaining coconut oil and nut butter in a small bowl and mix until well combined.
- Remove the tin from the freezer and spoon about 2 tsp. of the nut butter mixture into each of the paper liners. Place back into the freezer to set for 5 minutes.
- If the remaining chocolate mixture has begun to set, microwave for 15 seconds and stir until smooth.
- Remove the tin from the freezer and spoon the remaining chocolate mixture evenly over the nut butter. Ensure that there is no nut butter showing.
- Place in the freezer for 30 minutes or until the cups have set. Peel off the paper liners and serve.
- Store in an airtight container in the fridge for up to a week. YUM!
Homemade Sour Strawberry Gummies
Recipe: paleohacks.com

ingredients:
- ¾ cup lemon juice
- 1½ cups fresh strawberries (cut into small pieces with the leaves removed)
- 2 T maple syrup
- ¼ cup collagen powder
directions:
- Place the chopped strawberries and lemon juice in a blender. Blend for 30 seconds until you get a thick liquid.
- Pour the liquid into a medium saucepan, and add the maple syrup and collagen. Whisk the ingredients together.
- Turn on stove to low heat, and whisk for 5 minutes (until everything is incorporated, and you get a thin liquid).
- Use a spoon to remove the foam from the top. Remove the saucepan from heat, and pour the mixture into a silicon mold.
- Let the collagen mixture chill in the refrigerator for at least 1 hour (until they are firm).
- Once firm, remove the collagen sour gummies from the mold and serve.
SAVORY
Avocado Chips
ingredients:
- 2 large sweet potatoes
- 2 tbsp melted coconut oil
- 2 tsp dried rosemary
- 1 tsp pink salt
directions:
- Preheat oven to 375 degrees F. Peel sweet potatoes and slice thinly, using either a mandolin or sharp knife. In a large bowl, toss sweet potatoes with coconut oil, rosemary, and salt.
- Place sweet potato chips in a single layer on a rimmed baking sheet covered with parchment paper. Bake in the oven for 10 minutes, then flip the chips over and bake for another 10 minutes. For the last ten minutes, watch the chips closely and pull off any chips that start to brown, until all of the chips are cooked.

I’ve been there…
I’ve had an unhealthy relationship with food. Depriving myself during the day and binging every night and weekend. I genuinely never thought I would be able to change my mindset and way of living. I was SO unhappy with my body, I was constantly bloated, always tired, thought so badly of myself and yet I did nothing about it.
I made this book because it’s something I wish I had when I was experiencing all of that pain and discomfort both mentally and physically. All I needed was to learn more about my body and most importantly a guide on how to be better with my food and really understand why I was feeling this way. I tried learning through many failed attempts and hacks. Many meal plans, and diets.
Oh, and detox teas? Yeah, I’ve been there done that. What I ate consumed my every thought.

Bye-Bye, Bloat is so, so, SO much more than an e-book with information. It’s about my lifestyle change and what I did to really balance my life. If you knew me 5 years ago and you still know me now, you would know I’m a very different person in the way I act and live and it’s because of the freedom and confidence I feel now that I know what works for ME.
